1 stick unsalted butter (room temperature)
1 cup sugar
2 eggs
3 Tbsp water (warm)
1 tsp vanilla extract
1/2 tsp salt
1 tsp baking soda
1 and 3/4 cup all purpose flour
4 bananas, mashed
1 cup milk chocolate chips (optional)
Chopped walnuts (optional)
Directions
- Preheat oven to 325 degrees F.
- In a large bowl, cream together butter and sugar with a fork.
- Mix in eggs, water, vanilla extract and salt.
- Sift in the baking soda and. mix with a spoon.
- Slowly add in the flour and stir.
- Mix in the mashed bananas and chocolate chips (if desired).
- Grease the bottom and sides of 2 loaf pans with non-stick baking spray and add mixture evenly to both pans.
- Bake uncovered for 4o minutes.
- Remove from oven and cover both pans with aluminum foil (make sure to use oven mitts so you don’t get burned!) and bake for another 2o minutes or until a toothpick inserted in the center comes out clean. If you don’t have any toothpicks on hand then a butter knife will work just as well.
- Place on a wire rack or cutting board to cool. When cooled, remove bread from pans and serve!
Notes
- Make sure to use bananas that are slightly browned…..they are easier to mash, have a better consistency and add to the moistness of the banana bread!
