Chocolate Cherry Cake

This is another box cake that tastes like it’s made from scratch! This Chocolate Cherry Cake is deliciously moist and super easy to make. This cake is on the sweet and rich side, so it will definitely satisfy the sweetest of sweet tooth’s! It is also easily portable and perfect for a summer BBQ.

Ingredients

  • 1 package of Fudge Cake Mix

  • 1 (21oz) can of cherry pie filling

  • 2 eggs, beaten

  • Frosting:

  • 1 stick of unsalted butter

  • 1 and 1/2 cups sugar

  • 1/2 cup milk

  • 1 and 1/2 cups semi sweet chocolate chips

Directions

  • Preheat oven to 350 degrees F
  • Grease the bottom and sides of a 13X9 inch pan with non stick cooking spray
  • In a large bowl, combine cake mix, cherry pie filling and beaten eggs (beat eggs in a separate bowl and add to the large bowl). STIR BY HAND. Do NOT use an electric mixer as that will macerate the cherries
  • Pour into prepared 13X9 inch pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. If you don’t have any toothpicks on hand then a butter knife will work just the same
  • While the cake is cooling, prepare the frosting
  • In a medium sized saucepan, combine butter, sugar and milk. Stir constantly and let mixture come to a boil. Boil for 2 minutes (continue to stir constantly or mixture will burn on the bottom)
  • Remove from heat and add chocolate chips. Mix until smooth. Pour over the cake
  • After cake and frosting have cooled, cut into bars and serve!
