Peanut Butter and Chocolate Fudge

This peanut butter and chocolate fudge is a combination that I just can’t resist. With only 4 ingredients it is super easy to make in just 10 minutes! Who doesn’t love a quick-n-easy fudge to satisfy a sweet tooth? I love this recipe because it has minimal ingredients and there is minimal kitchen clean up. It just doesn’t get any better!

Peanut Butter and Chocolate Fudge

Ingredients

  • 1 cup peanut butter chips

  • 1 (14 oz) can Eagle’s sweetened condensed milk

  • 1 tsp vanilla extract

  • 1 cup chocolate chips (semi-sweet)

Directions

  • Place aluminum foil on the bottom and sides of an 8 inch square pan
  • In a small mixing bowl (I prefer glass but you can use any microwave safe bowl), mix peanut butter chips and 2/3 cup of the Eagle’s condensed milk
  • Microwave for 1 minute on high. Stir and microwave for another 30-45 seconds. Stir until all chips are melted and mixture is smooth. There should not be any lumps, if so then microwave another 10 seconds and stir.
  • Add 1/2 tsp vanilla extract and stir until combined well.
  • Pour peanut butter mixture into the prepared 8 inch pan. Make sure to spread the mixture evenly (using a knife or a spatula)
  • In a second microwave safe mixing bowl, combine the chocolate chips and the remaining portion of the Eagle’s condensed milk. Repeat Steps 3 and 4 above.
  • Pour the chocolate mixture over the peanut butter mixture and spread evenly
  • Cover with aluminum foil and refrigerate until fudge is firm (approximately 2 hours)
  • Cut fudge into bite sized pieces or squares
  • Fudge needs to stay refrigerated when not being served and it needs a tight cover!

Notes

  • Before cutting the fudge, I like to remove the foil and place the fudge directly on a cutting board (otherwise you are cutting the foil up as well as the fudge and it will stick to the bottom!)
  • After cutting the fudge into bite sized pieces, I like to place each individual piece into a mini- baking cup. The regular sized cups are what you would use to bake muffins or cupcakes. There is a mini version of these cups that is perfect to serve small bite sized pieces of fudge.
